Please help me with the settings to NOT display the file extensions.

You can ensure that you can not display the file extension through a unique template.
The easiest to modify one of the templates on the Child and files.html file instead of the ‹!- title -› link instead of the ‹!- name -› link.
Or simply just give a description of the documents.

Is it possible to change the behaviour to opening (in my case .pdf files) instead of downloading them? Preferably in a new window...

The plugin passes the file link or if hide_direct_url is switched on, the content itself as a stream to the browser. It’s up to the browser settings to download or display this.
